Turkey a la King


This has to be one of the most popular uses for leftover turkey and chicken. I usually add a little turmeric and curry powder for added colour, and….my family really likes their curry! But a true Turkey a la King contains neither. The turmeric is an excellent preventative measure, and in my opinion should be used in cooking whenever the opportunity arises. Ingredients:

½ c butter or margarine

1 small green bell pepper, chopped

1 cup sliced mushrooms, or 1 small canned mushrooms, drained

½ c all-purpose flour

½ tsp salt

¼ tsp pepper

1½ c milk

1¼ c chicken broth

2 c cut up cooked turkey

2 seeded and diced jalepeno peppers (optional)

3 c hot cooked rice or 12 triangles toasted bread

  1. Melt the butter in a large pan over medium-high heat. Stir in the green pepper and mushrooms, cooking until the pepper is tender-crisp.
  2. Add the flour, salt and pepper. Stirring constantly to prevent burning, continue cooking over medium-high heat, until the mixture bubbles.
  3. Stir in the milk and the broth.
  4. Bring to the boiling point, still stirring constantly.
  5. Boil and stir 1 minute.
  6. Stir in the turkey and diced jalapeno pepper, and continue cooking until the turkey has warmed.
