Tasty Turkey Stroganoff

A different twist to a standard stroganoff, Tasty Turkey Stroganoff will serve 6 healthy appeties, easily.

1 c chopped onion

1 c slice mushroom

2 T butter

3 c julienne strips of cooked turkey

1½ c turkey gravy

2 T ketchup

¼ c cooking sherry

1 c sour cream egg noodles

¼ c fresh chopped parsley

  1. Prepare the egg noodles according to package directions. Drain, toss with the fresh parsley, and set aside on a covered dish to keep it warm.
  2. In a large frying pan, heat the butter.
  3. Add the onion and mushrooms, sautéing until the onion are soft.
  4. Add the turkey, gravy and ketchup.
  5. Simmer for approximately 5 minutes, until heated through.
  6. Slowly stir in the sherry, bringing it just to a boil.
  7. Then stir in the sour cream –but do not let it boil.
