Basic Homemade Boursin Cheese recipe:

1 lb farmer’s cheese, or ½ lb cottage cheese and ½ lb ricotta cheese

8 oz cream cheese, softened (a home-made recipe is found in the betweenclosefriends.com blog under the ‘Recipe’ category, along with other how-to methods to make a variety of cheeses including a variety of other recipe suggestions)

1 stick butter, softened

4 large cloves garlic, minced

2 medium shallots, minced

½ cup finely minced parsley, tightly packed

3 T minced chives

1 tsp freshly ground pepper

¼ tsp cayenne

salt (optional)

  1. In a medium-sized bowl, blend the softened cream cheese with the farmer’s or cottage and ricotta cheeses, together with the butter.
  2. Then, thoroughly mix in the remaining ingredients.
  3. Divide your basic Boursin Cheese mixture into four small bowls or ramekins.
  4. Make the accompanying variations: Boursin au Poiver, Danish Boursin, French Boursin, and/or Italian Boursin from one of each of the four small bowls or ramekins. The recipes for these variations are contained in this blog.
