3 c large cubed cooked turkey
½ c orange marmalade
¼ c lime juice
¼ tsp Tabasco Sauce
- Soak 4 wooden skewers in water for 15 minutes.
- Make Sweet Potato Crisps. Keep warm under a cloth until ready to serve.
- Prepare Ham Fried Rice. While the rice is cooking, begin preparing the Indonesian-style Turkey Satays.
- Remove the wooden skewers from the water, then thread 5 or 6 of the turkey cubes onto each skewer.
- In a small bowl, mix together the marmalade, lime juice and Tabasco sauce.
- Lightly brush this sauce over each of the turkey cubes.
- Place each kabob onto the baking dish, and broil for 10 minutes in the oven, or until evenly golden. Every 2 minutes, turn the kabobs, and brush with more of the sauce.
- Arrange the kabobs over a bed of Ham Fried Rice, garnished with Sweet Potato Crisps. (recipes available on betweenclosefriends.com blog)
