Nourishing Avocado Smooothie

In this recipe for a Nourishing Avocado Smooothie, the avocado benefits work from the inside and are aided with the addition of the cucumber and parsley! Ingredients: 1 medium ripe avocado, 2 T freshly squeezed lemon or lime juice ¼ c finely chopped parsley 1 5-6” washed organic cucumber 1½ – 2 c chipped ice

1. Scoop out the avocado pulp into a blender.

2. Add the cubed cucumber, lemon or lime juice and blend until mushy.

3. Add in the parsley and blend until it is smooth.

4. Add the chipped ice, blending for 25-30 seconds.

5. Pour your Nourishing Avocado Smooothie into a large glass, serve and enjoy immediately.

Avocados are considered to be an almost complete food partly due to the fact that they are so rich in potassium and Vitamin A. In fact, certain parts of the world wean their babies on mashed avocado!
