Vanilla Pecans

4 c pecans or walnut halves
¼ c sugar
1 T veg oil
1 T vanilla
1 tsp cinnamon
½ tsp nutmeg
¼ tsp salt pinch cayenne
1. In a large pot of boiling water, blanch nuts for 1 minute. Drain.
2. Stir together oil and vanilla, toss together with the blanched nuts.
3. Spread the oiled nuts on a foil-lined rimmed baking sheet, then bake in a 300 degree F oven for 20 minutes.
4. Stir and bake 20 minutes longer.
5. In small bowl, combine the cinnamon, nutmeg salt, and cayenne. Sprinkle this seasoning over the roasting nuts, toss to combine evenly. Return the seasoned nuts to the oven for 5 minutes.
6. Let cool in pan on a cookie rack.
7. Package and serve. Delicious!
