How to Make the Perfect Green Goddess Dressing

The first time I ever tasted Green Goddess Dressing was when I was working at the Vancouver Stock Exchange and we were snowed in. The traders treated the key operators to a night’s stay at Hotel Vancouver, so that we would be able to man our posts at 6am Friday morning.

We were encouraged to try some of the very best dishes offered by these expert chefs. Since salads were always eaten with a meal, this Green Goddess Dressing quickly became one of my favourite salad dressings.

It took years before I was able to duplicate this culinary treat that was prepared for me on that snowy Thursday night.

Ingredients:

1 tsp tarragon

1 c mayonnaise

½ c chopped fresh parsley

2 T chopped chives

1 T freshly squeezed lemon juice

¼ c apple cider vinegar

8 oz sour cream

2 T anchovy paste

1 clove garlic, crushed

  1. Soak the dried tarragon in vinegar in a medium glass bowl for 10 minutes.
  2. Stir in mayo, sour cream, parsley, chives, anchovy paste, lemon juice and garlic until smooth.
  3. Cover with plastic wrap and chill at least 2 hours to blend flavours.
  4. Serve chilled over your favourite salad greens. Enjoy!
