How to Make a Deli Favorite–Baby Corn Salad

Ingredients:

1 kg kernel corn, frozen

1 red & 1 green pepper, finely diced

1 med red onion, diced finely

1-12 oz can baby corn cobs

1 lb tender crisp cooked baby carrots

3-4 stalks celery, finely diced

approximately ¼ c fresh cilantro (or parsley)

1. In a large bowl, mix together the above ingredients. Set aside.

2. In a separate small bowl, mix together the following:

½ c olive oil,

2/3 c red wine vinegar

½ tsp salt,

1 tsp pepper (optional, add ½ tsp basil)

3. Pour the vinaigrette over the vegetables, and chill at least 3 hours in the fridge before serving.
