2 cups honey
8 ½ pints water (18 cups)
2 cups freshly squeezed lemon juice
3 T fresh rosemary leaves, plus more to decorate
8 cups sliced strawberries
2 cups freshly squeezed lime juice
4 pints sparkling mineral water (8 cups)
ice cubes
3-4 scented geranium leaves
- Combine the honey, 4 ½ cups water, 1/8 of the lemon juice, and the rosemary leaves in a saucepan.
- Bring to a boil, stirring until all the honey is dissolved.
- Remove from the heat and allow to cool for about 5 minutes.
- Strain into a large punch bowl.
- Press the strawberries through a fine sieve into the punch bowl; add the rest of the water and lemon juice, and the limejuice and sparkling water.
- Stir gently. Add the ice cubes 5 minutes before serving, and float the geranium and rosemary leaves on the surface. (For farsighted entertainers, before the party, freeze some geranium petals, strawberry slices, and/or rose petals in the ice cube tray. Use these decorative ice cubes to keep this punch cool)
- Serve the punch in small glasses adorned with a fresh lime twist.
