For a southwestern flavour to any leftover turkey, and to please your family, try this hearty version of Ginger Turkey and Black Beans. It serves 6 easily, and the added ginger helps with the digestion, and as a preventative for colds that run rampant during this time of year. However, this recipe is well received all year round.
4-5 c cooked cubed turkey
salt and pepper, to taste
½ tsp garlic powder
1 tsp paprika
1 tsp ginger (prefer to use fresh, but powdered is acceptable)
2 T lime juice
1 tsp minced garlic
½ c chopped green onions
1-15 oz can sliced peaches, drained and cut into chunks
2-15 oz cans undrained black beans
1. Put the turkey in the bottom of a 2 quart oblong baking dish. Sprinkle the salt and pepper, garlic powder, and the paprika over top.
2. In a medium-sized bowl, mix together the peaches, ginger, lime juice, garlic, green onions and the black beans.
3. Spoon this mixture over top of the turkey. Cover, and bake in a preheated 350 degree oven for approximately 30 minutes, or until the turkey is warmed through. Serve as a side with mashed potatoes, or over top of rice. Enjoy!
