ELDERBERRY SYRUP FOR COLDS & CONSTIPATION

Friday, February 27th, 2009

European herbalists have long recommended this syrup to be taken for both colds and constipation.

In a very large stock pot, simmer 1 gallon of fully ripened elderberries in ½ cup of water until soft.

Strain the berries, saving all the liquid. (You can puree the berries in a strainer, and then add the pureed pulp, if you like).

To this liquid, add ½ ounce of grated fresh gingerroot and 18 whole cloves. Boil all together for 1 hour, uncovered. Then strain the mixture, and discard the spices. Bottle the syrup in sterilized corked bottles when your elderberry syrup has cooled.

This syrup is taken in 3 or 4 ounces doses for maximum effectiveness. Pour enough of your syrup to fill a wine glass halfway, then add very hot water to fill the glass entirely. Sweeten to taste with a little pure honey.
