Ingredients: 1 orange peel spiral whole cloves

6 small red apples

3 12-oz bottles ale

3 c dark rum

2/3 c sugar

1/8 tsp ginger

  1. Stud the orange spiral with cloves ½ “ apart.
  2. Place the studded orange spiral in a shallow pan along with cut up apples and bake, uncovered, for 20 minutes.
  3. In a large, heavy saucepan, combine the ale, rum, sugar and fresh grated ginger. Bring this mixture to a boil, stirring until all the sugar is completely dissolved.
  4. Combine the hot baked orange spiral and roasted apples into the ale mixture and continue cooking, reducing the heat to low. Simmer on low, until ready to serve.
  5. Serve warm in a mug with a clove studded orange slice floating, or as a wheel on the side of the mug.
