Ingredients: 1 orange peel spiral whole cloves
6 small red apples
3 12-oz bottles ale
3 c dark rum
2/3 c sugar
1/8 tsp ginger
- Stud the orange spiral with cloves ½ “ apart.
- Place the studded orange spiral in a shallow pan along with cut up apples and bake, uncovered, for 20 minutes.
- In a large, heavy saucepan, combine the ale, rum, sugar and fresh grated ginger. Bring this mixture to a boil, stirring until all the sugar is completely dissolved.
- Combine the hot baked orange spiral and roasted apples into the ale mixture and continue cooking, reducing the heat to low. Simmer on low, until ready to serve.
- Serve warm in a mug with a clove studded orange slice floating, or as a wheel on the side of the mug.
