This is a simple and easy version of the store-bought sushi. It does not require any special equipment, and looks and tastes just as good as anything you can purchase in specialty shops. The green colour of the cucumber sets this version out, and is sure to delight both family and friends.
Directions to make Quick and Simple Crab Sush:
1. Bring 4½ cups of water to a boil.
2. Addd 3 cups of washed Chinese or Shushi Rice. Simmer on low for 20 minutes.
3. Mix together: ¼ c rice vinegar,
1 T sugar, and
1 tsp salt.
4. Once the rice is cooked, and cooled slightly, sprinkle the above vinegar sauce evenly over top. Stir or toss to coat and make it shiny.
Ingredients for Sushi Assembly:
1 organic English cucumber
1 pkg of crab leg sticks
2 tsp wasabi powder
½ c mayonnaise
2 green onions
1 pkg of Nori or seaweed sheets
2 T fresh squeezed lime juice
2 T soya sauce
1 T rice vinegar
2 tsp sugar
Black sesame seeds
pickled ginger
- Slice the English cucumber thinly, and dab dry.
- In an 8X8” square pan, lay the cucumber slices side to side, covering the bottom of the pan in a single layer. (You will have enough ingredients for 2 pans)
- Unroll the crab leg sticks. Lay the unrolled crab over top of the cucumber slices, covering completely in a single layer.
- Spread the mayo/wasabi mixture as thinly as possible over the crabmeat. (recipe follows)
- Chop the green onions, and sprinkle over top of the crab.
- With wet hands, firmly press the rice mixture overtop all, evenly.
- Cover the rice with Nori or seaweed pieces, pressing firmly to adhere to the rice.
- Cover the pan with plastic wrap, and refrigerate for at least 2 hours.
To serve: Flip the shushi out onto a cutting board so that the cucumber is now on the top side.
Cut into squares. Sprinkle with Black Sesame Seeds and drizzle Sushi sauce (recipe follows) over top.
Plate decoratively on a platter, with pickled ginger on the side. Enjoy!
Washabi sauce: Mix together well: ½ c mayo and add 2 tsp wasabi powder.
Sushi Sauce: Combine and mix together: 2 T lime juice
2 T soya sauce
2 T water
