One of my favourite salad dressing is this easy to make Green Goddess Dressing. I first tasted, and subsequently literally ‘fell in love’ with it when I was working for the VSE, and because of the impending blizzard, the keypunch operators stayed at Vancouver Hotel for the night so we would be able to open at 6am. I was encourage to try something different by the other girls, and the name appealed to me!
This recipe plays on the taste buds, is delicate but alluring, and can easily become one of your favourite salad dressing too.

Ingredients: 1 tsp tarragon (fresh is best)
1 c mayonnaise
½ c chopped parsley (again fresh is best, but you can use dried, just let the flavours blend together a little longer before serving)
2 T chopped fresh chives
1 T fresh squeezed lemon juice
¼ c apple cider vinegar (for healing and health benefits of acv, please check the ‘category‘ section of betweenclosefriends.com)
8 oz fresh sour cream
2 T anchovy paste
1 clove garlic, crush
1. Put the tarragon and vinegar in a small glass bowl, and allow the flavours to blend for approximately 10 minutes.
2. In another small bowl, combine the mayonnaise, sour cream, parsley, chives, anchovy paste, and lemon juice.
3. Mix together well.
4. Slowly stir in the tarragon vinegar until well blended.
5. Cover and refrigerate for at least 2 hours to completely blend all flavours.
Delicious on any salad greens, from the simplest leaf lettuce to a very healthy museili mix. Healthy for you with the apple cider vinegar and fresh herbs, and tasty too!
