An Easy to Make Appetizer Cheese–Liptauer

Liptauer Cheese is an appetizer dip: a soft, smooth and creamy mixture to be scooped up on crackers, potato chips, pretzels, bread or raw vegetable slices. It is easy to make, simple to serve, and has an excellent flavour.

Because refrigeration hardens this cheese, it needs to be taken out of the fridge and allowed to stand at room temperature for about 45 minutes before serving.

½ cup slated butter, softened

4 oz. softened cream cheese (an excellent recipe for making your own homemade cream cheese is in the ‘Recipe’ category of betweenclosefriends.com)

1 tsp (heaping) of caraway seeds

1tsp pickled capers, drained

1 tsp (heaping) Dijon mustard (see ‘Recipe’ category of betweenclosefriends.com for homemade version)

1¼ tsp paprika

1 boned anchovy fillet

  1. Cream the butter in a small mixing bowl until it is light and fluffy.
  2. Add the cream cheese and continue beating until it is smoothly blended.
  3. Chop the caraway seeds in a blender, then add to the butter mixture.
  4. Finely chop the capers, and also add them to the creamed mixture.
  5. Add the Dijon mustard and paprika.
  6. Rinse, dry and finely chop the anchovy fillet. Then stir this into the cheese mixture, blending well.
  7. Shape this soft cheese mixture into a neat rectangle on a serving plate, and then press pretzels into all four sides creating a visible pretzel border.
  8. Serve with additional pretzels, crackers and/or raw vegetables. Voila! Enjoy!
