A Sweet Yogurt Cheese is delightfully delicious served over the top of fresh fruit, pies, or a warm fruit crisp instead of calorie-ladened whipped cream. This easy to make recipe yields about 1 cup of Yogurt Cheese.
–2 c 1% plain yogurt (recipe to make your own homemade yogurt, other cheeses, etc in the betweenclosefriends.com blog)
–icing sugar to taste
–pinch of cinnamon, if desired (Using ¼-½ tsp of cinnamon in place of the icing sugar will supply the required sweetness when this Sweet Yogurt Cheese is served over warm apple desserts, and save even more calories!)
- Add the homemade or store-bought yogurt to a cheesecloth-lined sieve supported over a glass bowl. Place the bowl, sieve and yogurt strainer or sieve over a bowl and place in the refrigerator overnight.
- In the morning, discard the whey to the bowl. The thickened yogurt (yogurt cheese) will be reduced in volume by half. Place the thickened yogurt cheese in a bowl. Add icing sugar to taste and a pinch of cinnamon if desired.
- Serve with warm fruit crisp.
