How to make Delicious Deli Dishes–Calamari Salad

During this holiday season, it is always advisable to have several entertaining salads on hand for both quick entertaining and for a quick snack for visiting freinds and family. Ingredients:

1 lb squid

1 oz lemon juice

2 oz pimento

2/3 c olive oil

1 red onion (or green onion), thinly sliced

4 oz sliced green olives

1 tsp oregano

½ tsp basil

4 oz sliced black olives

1 T garlic (powder or cloves)

1. Clean the squid, removing the quill, head and ink sack. Wash, and pat dry with paper towels.

2. Slice into rounds (rings).

3. Combine the rest of ingredients together.

4. Add the squid rings, and mix thoroughly to combine the flavours.

5 Refrigerate for at least 3 hours to allow all the flavours to develop.

Serve and enjoy!
