Diced Turkey Salad

As a main meal, either at noon or dinnertime, this version of Diced Turkey Salad will yield about 6 cups of salad. It is equally delicious made with leftover turkey from a holiday meal, or using freshly cooked and cooled turkey–either white or dark meat.

4 c cubed cooked turkey

2 T minced onion

2 c diced celery

½ c finely diced green pepper

1¼ c mayonnaise ½ tsp curry powder

tsp sugar

1 tsp salt

2 tsp lemon juice

2 tsp grated onion

  1. Combine the cubed turkey, minced onion, celery and green pepper in a large bowl.
  2. Blend together the mayonnaise; curry powder, sugar, salt, lemon juice and grated onion in a small bowl.
  3. Pour the sauce over the turkey mixture, tossing to mix well.
  4. Chill for at least one hour before serving.
